Beefsteak Mushroom Stroganoff

500 gms of Beefsteak Mushroom
2 large Onions
50 ml of Brandy
200 ml of White Wine
10 gms of Paprika
200 ml of Cream
500 ml of Water
Rapeseed Oil
Cracked Black Pepper


Chop the onions into large cubes. Heat a thick bottomed pan, add the oil and fry the onions until golden brown (about 10 minutes). Chop the beef steak fungus into rough cubes of about 2 cm and add to the pan. Sprinkle with paprika and herbs. Cook for 2 minutes before adding the brandy and white wine. Reduce down by 2/3, then add the water. Cook for 20 minutes then add the cream. Reduce by 1/2 and season

Serve with potato straws and sour cream.
