Foragers Feast Spring Foraging Workshops

We run a series of spring foraging courses in association with Shillingford’s at the Quay and Suffolk Market Events. These courses are held in beautiful landscape of Arger Fen in Suffolk. They take place in March, April and May each year.

Our spring courses focus on the abundance of tender spring plants that assault our senses at this time of year and banish the winter blues. We will guide you through the spring larder from the humble nettle to the glorious wild garlic. There is something to delight the eyes, the nose and the taste buds at every turn. Carl Shillingford’s expertise will show you how to turn these amazing wild plants into gourmet delights using little more than a kitchen knife and a camping stove.

 

Foragers Feast Mushroom Foraging Workshops

We run a series of mushroom foraging courses in association with Shillingford’s at the Quay and Suffolk Market Events. These courses are held at Tiger Hill, a privately owned Local Nature Reserve in Suffolk. They take place in September, October and November each year.

Autumn is the season of mists and mellow fruitfulness, and the perfect time to see mushrooms in all their variety of shapes and colours and textures. From penny buns to blewits, hen in the woods to trooping funnels, wood ears to waxcaps. We will guide you through these wonders and show you how to tell the best edibles from the deadly poisonous. Carl Shillingford has created a host of stunning recipes to bring out the best in each mushroom, Butter Bolete Ragu, Beefsteak Stroganoff, Chicken of the woods Satay, and more. The menu changes every visit as the mushroom season unfolds.

Tiger Hill boasts the largest area of ancient acid grassland in Suffolk as well as a good mixture of ancient and secondary woodland. We normally see 60 to 70 species of fungi on each workshop. Of these about a third are good edible species. Since running our mushroom workshops at Tiger Hill we have recorded over 250 species of fungi.
