St George’s and Wild Garlic Quiche

St George's & Wild Garlic Quiche

INGREDIENTS: (makes 2 large quiches)

250g St George’s mushroom
100g Wild garlic
200g Cheese
200g Bacon bits

Quiche mix:
4 Eggs
pinch of Nutmeg
800 ml Milk
Salt

Pastry:
500 g Flour
100 g Butter
2 Eggs
125 ml Milk
Salt

METHOD:

Pastry:
Rub the flour, salt and butter together. Add the egg and milk and bring the pastry together with the minimum of handling. Cut into two, cover with film and leave in the fridge for 1 hour to relax and set. Oil and flour the quiche moulds, roll out pastry to fit, gently press the sides

Quiche mix:
Whisk all of the ingredients together and pour into the mould. Slice and fry the bacon bits. Leave to cool. Chop the wild garlic and mushrooms up and add to the mix. Add the bacon and grate cheese on top

Place in a moderate oven (180 degrees) for 40 minutes, reduce heat to 160 degrees after 20 minutes.
